1/2 cup celery — 1/4″ slice
1/2 cup red onion — diced 1/4″
6 slices bacon — crisp, chopped
1 cup mayonnaise
1/4 cup mustard — Creole style
3/8 teaspoon Louisiana hot pepper sauce
1 tablespoon Cajun seasoning
2 quarts mashed potatoes — cold
Combine first 7 items well. Break up the mashed potatoes so that there are still some lumps. Gently combine so that lumps of potato remain.

3 cups macaroni — dried
2 pounds ham — diced
2 pounds broccoli — fine dice
1 quart cream sauce — cold
1/2 gallon cheddar cheese — grated
Boil macaroni al dente. Drain and cool. Mix all ingredients well. Butter and flour a large casserole dish. Cover with foil and bake at 350 for 45 minutes. Remove foil and bake for 10 min.
